It is ideal for supporting the flavours of black teas and flavoured green teas, as well as fruit and herbal infusions. This sugar gets its subtle caramel character through a special manufacturing process. Sugar cane is crushed and the juice extracted; this is then thickened and tiny “seed” sugar crystals are added to it. The produced sugar is rinsed once in water, centrifuged and dried. The end product is a lighter cane sugar with a lower proportion of molasses and less flavour – the perfect companion for high-quality teas.
