White tea skips all the complex processing steps. The tea leaf is only dried. Unlike green tea or black tea, it is not oxidized or rolled. The leaves are dried directly after withering. But this by no means implies that it is an easy tea to make. On the contrary, the climate on the day of harvest must be neither too sunny nor too wet. Only the tender buds and the just opening first leaves are picked. The delicate tea is carefully collected in flat, well-ventilated baskets. For white teas, only the youngest and most tender leaves are picked. The elaborate harvest by hand only takes place in spring and is the basis for one of the most sought-after teas in the world. The delicate aromas are thus preserved through careful handling. As a result, the tea convinces with a mild-velvety, slightly flowery taste.
