Matcha

Matcha tea has always played the leading role in Japanese tea ceremonies and essentially means “powdered tea”. Zen Buddhist monks brought the tea from China to Japan in the eighth century AD. The ground powder and the spirituality of the preparation had a profound impact on Japanese tea culture.
The cultivation of green tea made from matcha has its own ritual: four weeks before harvest, the tea plants are shaded with bamboo mats, resulting in a particularly dark leaf. The tea leaves are then steamed, dried and – once all the coarse leaf structures have been removed – ground to a fine powder in stone mills.
Matcha powder is rich in theanine and tannin, which have both stimulating and calming properties. Theanine not only promotes alertness and concentration, but also contributes to relaxation and a positive mood. The tannin contained in matcha ensures a particularly long-lasting effect due to its binding to the tea.


Sencha

Sencha is by far the most widely grown and consumed green tea in Japan.
Sencha essentially means ‘steamed tea’. Because oxidation is stopped by steam after around 10 to 30 seconds, the tea leaves retain its strong green colour. The leaves are then dried in hot air, shaken, and finally rolled into small flat needles. This method breaks open the cell walls, allowing the fine flavours of the tea to be released more easily. Sencha is grown in full sunlight, which gives it a remarkably high content of amino acids such as theanine and antioxidants such as catechins. Catechins protect the cells from oxidative stress and, in combination with the theanine contained in sencha and matcha, make JAPANESE TRIO the perfect anti-ageing drink.
